How to make Tinda Masala with Tomato:
Wash the gourds thoroughly, peel and dry them. Cut each gourd into 7 to 8 long pieces. Likewise cut all gourds.
Prepare tomato-green chilly-ginger paste
Take 1 tbsp oil in a pan and heat it sufficiently. When oil is hot, add 1/4 tsp cumin seed, 1/2 asafoetida, 1/2 tsp turmeric powder, gourds chunks and 1/2 tsp salt. Now add 1/4 cup water, cover and cook for 5 minutes on low-medium flame. Check the gourds, cover again and allow them to cook.
Prepare the masala
Place some in oil in another pan. When oil is hot, add cumin seeds, asafoetida, turmeric powder, coriander powder, fennel powder and saute for while. Now add tomato-green chilly-ginger paste and saute until oil starts separating from it. Masala is ready, add 1/2 cup water into it.
Gourds are also cooked, check to see if they have turned soft or not. Mix the gourds in the masala. Also add green coriander and mix well. Cover the sabzi and cook for another 3 to 4 minutes.
Sabzi is ready, take it out in a bowl and garnish with some green coriander. Serve piping hot sabzi prepared with round gourds and tomato with chapatti, naan or rice and relish eating.
