How To Make Achari Paneer
Wash tomatoes, green chilies, ginger and chop them into big chunks. Place them in mixture jar and make a fine paste.
Preheat a pan. Place fenugreek seeds, mustard seeds and cumin seeds into it and dry roast for few minutes. When spices cool, place them in mixture jar. Also add fennel powder or while fennel seeds, coriander powder or whole coriander seeds and ground all the ingredients coarsely.
Achari Paneer Gravy
Preheat a pan, add some oil into it. When oil is hot, add turmeric powder and coarsely grounded spices and saute for while. Now add tomatoes, green chilies, ginger paste, red chilly powder and saute the masala until oil starts separating from it.
Meanwhile cut paneer into 1-1 inch chunks. Oil has started separating from the masala, add cream, stir constantly and cook for 2 to 3 minutes.
When masala is cooked, add 1/2 cup water and garam masala powder into it. Also add green coriander and mix everything really well. After the gravy simmers once, let it cook for 2 to 3 more minutes and now add paneer chunks into it. Cover and cook for 2 more minutes.
Achari Paneer is ready, take it out in a bowl. Serve Achari Paneer sabzi with chapatti, parantha, naan or rice and relish eating.
Suggestion:

For making the Achari Paneer gravy, you can replace the use of cream with cashew paste or melon seeds pasts, mawa, poppy seeds paste and so on. You can make gravy as per your preference and taste.

If you wish to add onions in gravy, then take 1 finely chopped onion. Add onion in the oil first and saute until it gets pinkish in color. Rest, add the spices same as mentioned above to make the sabzi.
