We often make bhindi sabzi over flame but this sabzi can be prepared instantly and easily in a microwave.
Wash the okra with water thoroughly and place them over a sieve until dry or clean them with a dry cloth. Remove stalk from both ends and make a slit keeping it joint at the other side. Similarly, cut all okras.
Take one plate and add salt, ginger powder, mango powder, cumin powder, fennel powder, coriander powder, turmeric powder, asafoetida, red chilly powder, garam masala and some green coriander. Mix all spices really well.
Masala for stuffing the okras is now ready. Stuff the bhindi with this masala. Take a microwave safe bowl and place stuffed bhindi into it. Pour some oil over the okras and cover. Now microwave for 3 minutes.
Take out the bowl from microwave, stir the okras nicely, cover again and microwave for another 2 minutes.
Stuffed okra is ready, garnish with some green coriander. Serve this tantalizing sabzi with parantha, chapatti, naan or poori and relish eating.
