Microwave Bharawan Baigan Recipe

Stuffed brinjals are prepared differently in different regions with various styles of stuffing. It can be prepared in microwave easily and instantly. Today we are making North Indian style stuffed brinjals.

Ingredients for Microwave Bharawan Baigan

  •     Brinjals - 500 grams (10 to 12 small in size)
  •     Oil - 3 tbsp
  •     Green coriander - 2 to 3 tbsp (finely chopped)
  •     Ginger paste - 1 tsp
  •     Fennel powder - 2 tsp
  •     Coriander powder - 2 tsp
  •     Cumin powder - 1/2 tsp
  •     Dry mango powder - 1/2 tsp
  •     Turmeric powder - 1/4 tsp
  •     Garam masala - 1/2 tsp
  •     Asafoetida - 1 pinch
  •     Salt - less than 1 tsp or as per taste

How to make Bharawan Baigan in Microwave

Take turmeric powder, red chilly powder, coriander powder, fennel powder, salt, mango powder, ginger paste, cumin powder and garam masala powder in a plate. Mix well and add green coriander in the spices as well. Masala for stuffing the brinjals is ready.

Wash and clean the brinjals. Remove stalk and make 2 cut on the same place, dividing it in for halves but keep it joint at the bottom. Likewise cut all brinjals. Now start stuffing the masala. With help of a spoon, place little amount of masala ( in one brinjal place 1/2 tsp masala) in brinjals.

Take a microwave safe bowl and add 2 tsp oil into it. Place all brinjals in the bowl, one by one and if you have some masala left, then sprinkle it over the top. Now with help of a spoon pour some oil over all the brinjals. Cover the bowl and place it microwave. Cook for 4 minutes.

After 4 minutes, take out the bowl from microwave and flip the brinjals. Place back the bowl in microwave, cover and cook for another 3 minutes. After 3 minutes, take out the bowl and keep it as it for 5 to 6 minutes.

After 5 minutes, stuffed brinjals will be ready. Garnish with some green coriander. Serve steaming hot stuffed brinjals with parantha, chapatti or rice and relish eating.
