Lauki ka Raita Recipe - Gourd Raita Recipe

Lauki (bottle gourd) Raita is good in taste and equally nutritious. Some people do not like to eat gourd vegetable recipe, but i am sure they will definitely like bottle gourd raita. Raita enhances the flavor of food and helps maintains digestion.

Ingredients for Lauki ka Raita - Gourd Raita Recipe

  • Curd - 400 grams.
  • Bottle gourd - 250 grams.
  • Salt - 1/4 tsp or as per your taste
  • Green chilly - 1 (finely chopped)
  • Cumin seeds - 1/2 tsp
  • Asafoetida - 1 pinch

How to make Lauki Raita

Peel the gourd and wash it thoroughly under the running water. Peel it and grate or cut into small pieces.

Place grated lauki in any utensil filled with water and keep on flame for boiling (while boiling lauki add 1 tbsp water, cover it and boil on low flame).  Within 5-6 minutes the gourd will become soft. Strain rest of the water with help of a sieve.

Whisk the curd in the mixer or with the help of a whisker.

Put cooked gourd, salt, green chili and green coriander leaves. Roast cumin seeds and asafoetida on tawa. Grind them and add into the curd. Mix the ingredients well into the curd with the help of a spoon. Lauki raita is ready.

Transfer the raita in a serving bowl and put it inside the refrigerator to chill. Serve the chilled raita with hot and fresh food it taste more awesome.

Suggestion:

  • We can also add cumin seeds and asafoetida in form of tadka. Instead of cumin seeds, use rai with asafoetida for adding in raita.
  • Add 1-2 pinch red chilly powder if you prefer eating spicy food.
