Gajar Ki Kheer RecipePeel the skin from the Carrots and remove the stems from both the sides. Wash and grate them properly.
Boil milk in a heavy-bottomed utensil. When the milk starts boiling, add the grated carrots, and stir with a stirring spoon. When the milk boils again then turn down the burner, and stir the kheer in intervals of 3 to 4 minutes.
Cut the cashews nuts into thin stripes. Remove the stalks from the raisins, and wash them with water.
Add the cashews nuts and the raisins into the kheer and mix properly. Cook the kheer on low heat till the carrots and milk become properly mixed with each other. You can use the stirring spoon to check the consistency.
The kheer is prepared. Peel the cardamom, and ground the seeds before you add them to the kheer.
Take the kheer out in a bowl, and garnish it with the grated almonds. You can serve this kheer hot to your guests. It’s very delicious cold too.
