Bhatura Recipe - Paneer Stuffed Bhatura Recipe

The chickpeas had to be soaked the night before and now we cannot prepare Chole. So instead of chickpeas we will prepare Aloo Matar curry which is a good combination with Paneer Bhature. So lets begin the preparation for Stuffed Paneer Bhatura.

- Ingredients for Bhatura

  • For Bhatura's dough
  • Flour(maida) - 400 grams(2 cup)
  • Suji(semolina) - 100 grams(1/2 cup)
  • Curd - 100 grams (1/2 cup)
  • Baking powder - 1 tsp
  • Salt - add to taste( 3/4 tsp)
  • Sugar - 1/2 tsp
  • Oil - to  fry Bhaturas
 
- For Paneer's pitthi/stuffing :
 
  • Paneer - 125 grams (grated)
  • Salt - add to taste ( 1/2 tsp)
  • Green chilli - 1 (finely chopped)
  • Garam masala - 1/4 tsp
  • Green coriander - 1 tbsp(finely chopped)

- How to make Stuffed Paneer Bhatura :

 
Prepare the dough for Bhatura
Filter flour and Suji and keep aside in a utensil. Make a crater in the flour, put curd, baking powder, salt, 1 tbsp oil and sugar in it. Mix the contents properly with your hands. Using warm water knead a soft dough. Cover the dough and keep aside for 2-3 hours, if you are in a hurry then keep for 30-45 minutes. This ferments the dough.
 

- Make Paneer ki Pitthi/Stuffing:

 
Grate the Paneer, add salt, green chilli, Garam masala and green coriander to the grated Paneer. Paneer stuffing is ready to be filled in the Bhatura.
 

- Prepare Bhatura:

 
Make 16-18 same sized round balls from the dough.
 
Pour oil in a pan(kadhai) and heat. Take one ball of dough, expand it by pressing with your hand. Make a little depth with your fingers and place 1 or 1/ 1/2 spoon of stuffing in it. Wrap up this piece of dough and close it on all sides. Gently press the stuffed ball as you expand it then put it on a board and with a rolling pin flatten into an oval shape. Roll it a bit thick, you can also apply dry flour to the stuffed ball and then flatten.
 
The oil in the pan must have heated, check to see if it has(put a small piece of dough in it. If the oil is hot then the piece will rise up to the surface else it will sink). Put the rolled Bhatura in hot oil, press with frying ladle to make it puffy. Fry till Bhatura turns light brown then keep it on a plate covered with a paper napkin. Similarly fry all the Bhaturas and keep them on the plate.
 
We need Chole with Bhatura, but as we did not before we will serve Paneer Bhatura with the Aloo Matar masala that we have prepared. We also have lemon pickle to accelerate the taste.
 

- Aloo Matar Masala

 
Boil 4-5 potatoes in the cooker. Boil 1 cup of green peas in the microwave. Make a paste of 3 tomatoes, little ginger and 3 green chilies.
 
Pour 1 1/2 spoon oil in the pan and heat. Then add 1/2 tsp Jeera, as Jeera is fried put 1/2 tsp turmeric powder, 1 tsp coriander powder. Once these spices fry put the chilli-tomato paste and fry for some time. Put in the peas and potatoes(peeled and broken into pieces) and mix well. Now add 1 glass of water, 1 tsp salt and 1/4 tsp red chilli powder. Mash the vegetables then boil and add less than 1/4 tsp Garam masala. Curry is prepared in minutes.
 
Take out the curry in a bowl, garnish with chopped green coriander and place on the table. Everyone will love these Stuffed Paneer Bhaturas with Aloo Matar masala.
