Figs (anjeer) kofta curry is a traditional Punjabi cuisine prepared on special festivals. Paneer-potato koftas stuffed with figs, will surely make you drool.
Peel boiled potatoes. Grate potatoes and paneer in a bowl. Add salt, black pepper, green coriander and corn flour into it and mix all ingredients nicely. Knead until smooth. chop anjeer in small pieces.
Take one dough ball and with help of finger and thumb flatten it. Place 3-4 pieces of anjeer over it and roll back into round shape, covering whole stuffing. Roll aptly and place it in a plate. Likewise prepare all stuffed koftas.
Preheat oil in a wok. When oil is sufficiently hot, place 4-5 koftas in hot oil and fry until they turn golden brown in color. Place them on a plate. Likewise fry all koftas.
Finely grind tomatoes, green chilly and cashews with help of mixture grinder. Keep 2 tbsp oil in wok and remove the rest. Add cumin seeds and saute for while. Now add turmeric powder, coriander powder and saute for few seconds. Also add tomato-cashew-green chilly paste in masala and saute until oil starts separating. Add red chilly powder and stir constantly at regular intervals.
Masala is now ready, add 1 cup water into it. Also add salt, garam masala and green coriander(chopped) along with it and mix well. Cook until it comes to boil. After gravy starts simmering, reduce the flame, cover the curry and cook for 3-4 minutes.
Gravy is now read, turn off the flame and take it out in a plate. Place kofta balls into it and garnish with green coriander. Anjeer kofta curry is ready. Serve steaming hot curry with chapatti, parantha, naan or poori and enjoy eating.
