Aloo Curry

Potato is the most abundantly available vegetable. You can buy 2-3 kg potatoes and keep them, potatoes do not get spoilt immediately. You can cook them whenever you want. Potato has a good taste and we can prepare many dishes with it. One of them is Aloo curry.

Ingredients for Aloo curry

  •     Potatoes - 300 grams (5-6)
  •     Gram flour/Besan - 1 tbsp
  •     Tomatoes - 200 grams3-4)
  •     Green chilli- 3
  •     Ginger - 1 inch long piece
  •     Oil  - 2 tbsp
  •     Heeng(asafoetida) - 1 pinch
  •     Jeera(cumin seeds) - 1/2 tsp
  •     Turmeric powder - 1/4 tsp
  •     Coriander(dhaniya) powder - 1 tsp
  •     Red chilli powder - 1/4 tsp
  •     Garam masala - 1/4 tsp
  •     Salt - add to taste (1 tsp)
  •     Green coriander - 1 tbsp(finely chopped)
 

How to make Aloo Curry

Peel and wash potatoes, make 4 pieces of 1 potato.
 
Pour 1/2 tbsp oil in a small pan(kadhai) and heat.  Fry gram flour till it turns light brown.
 
Grind tomatoes, green chillies,and ginger in a mixer.
 
Pour oil in a cooker and heat. Fry Heeng and Jeera in hot oil. After Jeera is fried, put turmeric powder and coriander powder. Stir spices with a spoon and put the tomato paste. Fry all of the ingredients till oil starts to separate from the spices.
 
In these spices add the cut pieces of potato, put fried gram flour and red chilli powder then fry for 2 minutes. Now pour 1 glass(300 grams) of water and salt, stir with a spoon and close the lid of the cooker. After 1 whistle lower the flame and let the vegetables cook for 2 minutes. Turn off gas.
 
Once all the pressure escapes from the cooker open it's lid. Now put Garam masala  and mix with the vegetables properly. Your Aloo curry is ready.
 
Take out Aloo curry in a bowl. Garnish with green coriander(to garnish the curry, put 1 tbsp oil and heat. Put some Jeera, 2 pinch red chilli powder in the oil and pour this Tadka on the curry. Doing this makes the curry look very tempting). Serve hot Aloo curry with parantha, chapati, naan or rice.
 
Note:
  • To eat a dish with onions in it, finely chop one onion and put it in oil after you have put Jeera. Gently fry the onion till it turns light brown then follow the given process to make the curry.
