Samvat Rice Kheer

You can make various recipes with Samvat Rice (Vrat ke Chawal). Today we will prepare Kheer with Samvat Rice. It is easy to cook and gives you enough nutrition and energy at the time of fast (vrat).

Ingredients for Samvat Rice Kheer

  • Full Cream Milk - 1 ltr. (5 cup)
  • Rice - 80 gms. (2/3 cups)
  • Sugar - 100 gms. (1/2 cups)
  • Cashews - 10-12
  • Raisins - 25-30
  • Small Cardamom - 4-5
 

Method - How to make Samvat Rice Kheer

Wash and soak the Samvat Rice for half an hour. Cut the cashews into small pieces, break the stem from the raisins and wash it, and peel and grind the cardamom to put into the kheer.
 
Boil the milk in a heavy pan and add Samvat Rice into it once the milk boils. Stir it continuously with a spoon after every 3-4 minutes. Take the spoon deep into the pan while stirring it, so the kheer do not get stick at the bottom.
 
Once the rice gets tender, add cashews and raisins into it. Cook the mixture till the milk and the rice gets totally mixed into each other and reaches to a thick consistency.  The rice and milk should fall together while dripping from the spoon. Add Sugar into the Kheer and mix it well. Turn off the flame.
 
Samvat Rice Kheer is ready. Garnish it with cardamom seeds. You can serve it either hot or cold.
 

Suggestion:

You can use toned milk also to make Kheer. The quantity of mewa can be increased or reduced as per your preference.
